1. based on what ive seen at the grocery store, blacks dont do a lot of cooking from scratch. their carts are loaded up with processed foods, microwaved frozen foods, premade/prepackaged meals, and junk foods.
2. based on the restaurants ive been to, i dont see as many black cooks as i do mexican cooks, id say the numbers are 10:1, and thats a fucking conservative estimate by all means.
3. based on my experience in the restaurant industry: FOH basically non existent. i only worked with one black server in 5 years of waiting tables. BOH: blacks cut corners to get out quickly and do not take much pride in their work, if any at all.
4. old people in general are better cooks because of life experience, regardless of color
5. the black cooks i have seen at food festivals all make deep fried shit, or mask the awfulness of their foods with a lot of spices.
6. mexican cooks are simply better cooks as their foods are more flavorful and have a greater variety then just the same old 'soul foods' and deep fried foods.
7. mexicans have a better work ethic, hands down
8. whites are primadonnas mostly, with line cooks thinking they are the next 'iron chef'
9. whites cook a better variety of foods as they simply eat a melange of different ethnic cuisines.

ill stop there as to hopefully not catch a ban for a perceived racist tirade, but you can fucking cherrypick any example you want to make any point you want. time is the only true measure of ability and i havent seen it in my time, and definitely not while i was in the industry.

I live in a Southern city which is 25% Black. Black food can be delicious, but the service is usually slow and health standards questionable.

That being said, soul food is amazing. Fried catfish, smoked pork, mac & cheese, fried chicken, hush puppies, Johnnycake, ribs etc. Spaghetti too.
