Love cabbage, for me, I'll core it, then slice into fairly large pieces, not shreds.

Cook on a very hot pan with two tablespoons oil, sautee hot, salt/pepper, keep stirring. It should be hot, but not wilted, still firm bite but soft mouthfeel. I guess al dente is good description.

I used to hate it too but I learned boiling it in butter in a cast iron skillet is the superior way. Literally cut it in half and throw it in the rippen hot pan with oil and let it go black. Then add like a pound of butter, baste forever until it looks like a scrotum and ur good

Oh I know what that is. I think I had it at a Polish store in Chicago once. But that version didn't have bacon but this kind of sausage that wasn't even like sausage but more like lean, unground pork meat in tube form, thinly sliced and seared. I haven't had sausage like that before or since. It was amazing. The pasta was square shaped. The whole dish was very satisfyingly fatty. There is something about pasta and fat. They just go together. I always put way too much olive oil on my pasta. Pic is the closest thing I could find to what I ate, but I bet it's actually closer to the variety you're talking about.

Slice as thin as possible. Chop up chili peppers and garlic which you put into a bowl, add an equal amount of sugar then enough vinegar essence to cover. Add oyster sauce and sesame oil for some delicious umami. Dilute the mix with water until you can cover most of the sliced cabbage with it.
