Boneless and skinless sardines are terrible. They become dry, incredibly processed and need to be again further heated to sterilize. Dry. The sardines used are lower quality and would otherwise be rejected. Infestation, holes, wounds, and so forth can be cut off and would go unnoticed.
Not to mention, almost all skinless and boneless are the cheapest grade of oil. EVOO need not apply.
I am also convinced the boneless and skinless process and higher heating results in significant denature of the fatty-acids, defeating the entire health benefits of sardines.
