5 cups vegetable stock

1. Boil water in microwave for 1-2 minutes on high-low heat.

2. Add spinach leaves, tomatoes, onion, and garlic in one quart of vegetable stock. Stir-fry for 3 minutes (and if you like, add in extra broth). Cool.

3. Drain liquid in a colander and put the chopped kale into a blender. Set aside.

4. In a large saucepan, add oil over medium heat. After a few minutes, add spinach (chunks), lemon, onions and mushrooms. Stir-fry for 4-5 minutes or until softened. Pour off some of the water with the lid on and stir everything into kale. Let simmer for 10 minutes on low heat.

5. In a small bowl, combine garlic and olive sauce and sauté until aromatic. Add kale/chopped spinach mixture and serve with tomato sauce.

Mushrooms are good source of ergothioneine. Humans have a transport protein specifically for it so it can function as an intracellular antioxidant, preventing corruption of your mitochondrial DNA. And they can't overcook (as long as they're kept wet enough to not burn) so they can be added to anything.

I may not know much about them,but what I do know is they can look really cool and they are an excellent collected of flavor. Had some amazing mushroom jerky as well as fried puffball steaks. Both are great and quite different.
