The name is spanish but the way it's cut up makes it look like a certain Chinese dish. Hispanic countries have lechon too. It just looks different.

We call that Chicharron in the Dominican Republic. It’s mainly used to denominated deep fried meat, skin on. Also have chicharron de pollo, puerqo(pork) etc.Pretty much all Hispanic countries call it that as far as I know

So basically it's just pork rinds with a bit more meat? This is called "torresmo" in Brazil, and it is usually served at bars with lemons and alcoholic drinks. There's also the "pururuca" (which i believe it's just regular pork rinds), which is like the torresmo but just the skin and fat with no meat, and it's fried a bit more.

I usually leave it in the oven for some ten hours at 120 degrees on a rack over a tray with water to keep the oven moist, and catch the drippings.
An hour before I'm going to eat I crank the oven to 200 degrees, and prepare the rest of the dinner.
I've always ended up with an extremely juicy roast, with perfect cracklings this way.

In Poland we got skwarki which are cubes of heavily salted fried pork fat tissue. We either put it on pierogi or put them in a jar along with the lard that they lose during frying, apple cubes and sauteed onion and later we spread it on a trad peasant bread. Best shit ever during winter.
