In a lot of them it's just cheese blended with stabilizers and a bit of milk or whey. It's almost like if you made a mornay sauce and cut it into slices.

It's pretty decent on a burger or egg sandwich IMO, or mixed with other cheeses for a grilled cheese. It's just not good in cold sandwiches or if you use too much.
