Yes and no. There do exist nearly complete restaurant "kits" which is why tex mex, chinamerican, and basic bitch Italian are so similar. But dont sign off on a place just because they use sysco; they are one of the biggest distributors period, they do have real ingredients on their order forms as well as pallets of canned refried beans and salsa.

I was just thinking about this today after eating a disappointing lunch. It's because they don't mix it up and are low tier Mexican restaurants. I'm so tired of the beans and rice bullshit.

Some of the newer Mexican restaurants that are cleaning up business wise are mixing it up in a good way. No more tomato/spanish rice, but instead they have the Mexican white rice, that is lightly chicken flavored, with peas/carrots/green beans/parsley. Its cleaner tasting, and next, they accompany that with a small salad on the plate and or pot beans seasoned with chicken bouillon. Or, fried potatoes with things like carne asada. Those places are the future of Mexican food.

"Carne asada" likely whatever trash cut they got from sysco, they sell 40 lb cases of "scrap meat" that you can braise down in an oven with nice stuff, but they likely used some packaged seasonings and called it a day.
"Guacamole salad" aka how to spend 3 cents to fill up a plate with 1/2 oz bagged guacamole, 1/3 of an unripe tomato and a handful of shredded iceberg lettuce aka fucking green water.

Guess what... it doesn't fuckin' compare to real spic food 80% of the time. Realistically, even if you are of Mexican descent as some people put it, you still don't know what is real because your parents don't necessarily make the real deal.

Go to mexico, take pictures, eat various foods, and be absolutely amazed at the levels of culinary mastery that have been achieved in this vast and varied nation.

Never been to Baja California? It's this long peninsula hanging off of mainland Mexico, isolated from most of the cowboy shit, and they have an absolutely booming food industry there, along with seriously fine wines. The food in Baja resembles a modern spicy Mediterranean with dishes such as caldo de siete mares and camarones a la diabla and tacos de manta. You haven't lived till you gulp down beers, eating fucking shark or ray tacos and getting topped off afterwards by a lusty Mexican girl.

An aguachile or ceviche?
