I USED to have this problem with my fav Vietnamese place. I'd order their Hot and Spicy Beef (with onions and lemongrass) 'Very very spicy' and they would downgrade it because 'I worry about you, with the spiciness.' After mentioning a couple of times when leaving that I wished that the dish had been spicier they finally made it 'very very spicy' for me. While i was eating the cook stepped out to check on me. He watched for a minute then shook his head in amazement. Now at my local Indian place, first time I went there I ordered my dish very very spicy and the waiter gave me a 'this guy gets it' smile. The food was fucking perfect.

You can't fault restaurants for doing this. I'm certain when they initially opened they'd routinely have cumskins order it, "the same level of spiciness as you thais eat it." They'd take the customer at their word and the cumskin would take a bite and start raging about how it was inedible, they were fucking with him and he wasn't paying. They quickly learned their lesson and no matter how hot the cumskin says he wants it, they politely nod yes, but he gets the mild version for whites. Just common sense business.

I've noticed that restaurants will adjust the spiciness based on race.
I went to an Indian restaurant for lunch with my Indian professor.
We both ordered the same dish. We both requested "medium" spicy.
When the server brought our plates, he said something to my professor in Hindi. They both laughed a little.
Out of curiosity I asked after the water left and my professor told me "the server said he gave you 'white people' medium, but gave me actual medium."
I tasted both. Needless to say, mine was not at all spicy but the other had a bit of a spiciness to it.

I don't understand the obsession with extreme spiciness. Spicy isn't a flavor, first of all, it's literally pain, because capsaicin makes your mucous glands think they are actually on fire. I like some heat but there's a point when the pain response overwhelms the actual flavor of the food. It's a way to mask poor cooking; when I have to eat whatever shitty combination of crumbs left in the pantry three days before payday, I usually drown it in hot sauce, way spicier than I normally would, to hide how awful or bland whatever it is (peanut butter and canned peaches and pickles sandwich with hot sauce).
Bragging about how much heat you can handle is like bragging about how hard you can get hit in the nuts.

Here's the thing OP, I come from a long line of cooks. I'm not a wealthy man, but I've had five star food and have eaten just about every style and type of food on this planet at least once. Never once in my life did I ever sit down for a nice meal and say "man these flavors are amazing, but I wish my mouth was in pain!", in fact NOBODY does. Heavy spice was used traditionally to mask rotten/spoiled/low grade food and NOBODY is impressed that you were able to eat something spicy. It's like the kid in elementary school who bragged about going to Canada like it was some grand exotic journey.

Ok as someone who has been to probably 20+ thai places in about 4 cities, they ALL rank on a scale out of 5. 3/5 is what I get, medium heat, just to add flavor and enough heat to make me want to keep eating.
