Anyone else just not like cake? I would take chocolate, candy or ice cream over a cake any day. The only exception are good brownies.

One Bowl Chocolate Cake

Cake:
1 C. White Sugar
¾ C. + 2 T. Flour
¼ C. + 2 T. Unsweetened Cocoa Powder
¾ t. Baking Powder
¾ t. Baking Soda
½ t. Salt
1 Egg
½ C. Milk
¼ C. Oil
1 t. Vanilla
½ C. Boiling Water

Chocolate Frosting:
1 1/3 C. + 1 T. Powdered Sugar
3 T. Unsweetened Cocoa Powder
3 T. Butter, Softened
2 ½ T. Milk
½ t. Vanilla
Pinch of Salt (if needed)

Cake:
Preheat oven to 350. Grease and flour a 9x9 round or square baking pan. In a large bowl, whisk together the sugar, flour, cocoa, baking powder, baking soda, and salt. Add the egg, milk, oil, and vanilla. Mix for 2 minutes on medium speed with a hand mixer, until smooth and shiny. Add in the boiling water and stir until combined. Pour the batter into the prepared pan. Bake for 30-35 minutes, until a toothpick comes out clean or with only a few crumbs. Cool in the pan for at least 10 minutes before removing. If leaving in the pan, let cool to room temp, or place in the freezer for 10 minutes before frosting. Makes one 9 inch cake.
Chocolate Frosting:
In a medium bowl, whisk together powdered sugar, cocoa, and salt (if using). In a large bowl, cream the butter until smooth. Gradually add the sugar mixture and milk. Add in the vanilla and beat until smooth and creamy. Add extra milk or sugar if needed. Makes enough to frost one 9 inch cake.

oh shit, I missed that, although I did get the cake and icing recipe from two different places. It tastes way better. The frosting is creamy and not too sweet, the cake is chocolaty and moist. I hate baking cakes, but this one was good enough that I wrote it down.

Santiago cake:

8 oz almonds
6 eggs (separated)
8 oz sugar
1 lemon for zest
1 cheeky pinch of cinnamon
Powdered sugar for sprinkling
A stencil of a Santiago cross

Grind up the almonds into flour until they're still a little coarse

Beat the yolks with sugar until creamy, mix in almonds and zest

Beat egg whites until foamy with stiff peaks, then fold in the rest of the mixture

Pour into greased 11" pan and bake at 350 for 35-45 minutes

Allow to cool then stencil on the cross with powdered sugar
