So this place started as some employees of a popular local pizza place I think here in Washington D.C. and they started selling wood-fired bagels last spring at the farmer's market and opened up a standalone restaurant in the fall. Lines out the DOOR on the weekends, almost all 20-30 something local yuppies.

In israel jewish cuisine is almost entirely palestinian, in Poland it's almost entirely Polish with the exception of the palestinian stuff, and the only things that aren't just elements of other cultures that they copied is really weird and for a lot of people gross tasting as well as high effort, like sweet cold carp, stuffed goose necks and raw salmon mayo salad. I like most of it despite tge weirdness but wouldn't go out of my way to eat it and I get why people dislike it.

I think there's a big divide between older and younger Jews, especially in big cities. Sure you have small pockets of super-observant Jews and that food culture is stagnant, but you also have wealthy, educated, less observant younger Jews who rarely keep kosher but are inspired by Jewish food as well as modern trends.

The idea that Jewish food is only kosher restaurants or a few specific foods is really limiting.

Recipe was a little fussy so I skipped a few steps but overall really it is just making a fish stock with fish bones and veggies and then poaching essentially fish meatloaf in it.

Did you actually make a chicken stock from scratch tho for the soup? That's what makes the difference, a proper jellied stock.

All I can speak on is Chicago, but there's a couple factors I've heard mentioned before.

The core Jewish-cuisine model is based around kosher-deli-style-sandwiches, at least around here. They serve time- and resource-intensive products (meat is expensive, especially as time's gone by, and piling-high the sandwiches is Part Of The Experience expected of a Jewish deli). So prices on a very simple sandwich can get really quite absurd, 17 dollars for some pastrami and mustard on rye. People don't like that so much, isn't homespun simplicity part of the appeal?

There's also the fact that the neighborhoods in Chicago which used to have a large portion of the Jewish population and Jewish-owned businesses, those neighborhoods "have done quite well for themselves" so to speak. Places where big development has gone down, where the cosmopolitan nature of People Who Can Afford To Live There takes over as the rents (for the historical population, for the businessowners of the community, the restaurateur!) explode exponentially and the tastes become defined by Whatever The Transplants Want, provided to them by whichever out-of-state chains want to start throwing up Furious Spoon's or what-have-you. The value of the land beneath them has outpaced their ability to price their product at an affordable-and-profitable rate.

We dont even jave that many jewish people here in germany anymore for some reason, but even then you can get israeli or jewish food pretty much everywhere.
Israeli food is really not much different than levantine food, but obviously kosher instead of halal so stuff like no milk and meat together and no shellfish applies. Jewish food is more rare but you can still find it. Its pretty much central european dishes made kosher and given funny names though. Really the most distinguishing feature of jewish restaurants is that they sometimes have jewish bands playing some jazzed up version of traditional jewish songs...
