So there's this place in Santa Barbara California called Saigon and their curry is simply crack level addicting. I've spent years trying to re-create it and can't, so im wondering what you guys would do. I've called and asked and they says they use a Coconut milk yellow sauce and chicken breast, that's all I got. Pic related, it's the curry they sell.

Lots of fish sauce probably. They may also add MSG. Get yourself one of pic related and some coconut milk.

My curry is as follows. Don't give a fuck about theirs.

My curry powder mix:
Salt
Ground Pepper
Fresh ground cumin, corriander, fenugreek, mustard, chili flakes, cloves
Turmeric powder
Onion powder
Fresh ground nutmeg
Garlic powder
Cinnamon
Ginger powder
Basil (should use thai but it's not that important)
Cilantro

How to
Butter and sesame oil in wok hot
Some of the powder mix in
Red onion strips in
Stir for color
Add coconut milk
Mix in curry powder
Add fresh minced ginger, garlic, and habenero
Add in cream, yes cream is a better tasting thickener than your stupid roux
Add in other ingredients
Add a little brown sugar to taste

Do not cook chicken in the curry.
Instead rub it with the curry powder and a little brown sugar then grill it over lump charcoal teriyaki style as in close to the coals then combine later otherwise the water in the chicken will ruin the curry and the chicken takes forever to cook in it and then it's fucking rubber anyway

Andrea Ngyuen's book "into the Vietamese kitchen" would be the first place I'd start.

It's hard to give you much more advice without being able to taste the curry in question.

These aren't Viet, but other god-tier yellow curry recipes can be found in books by Andy Ricker and David Thompson. It's not like curry is a traditional viet dish anyway so it's almost certainly something close to Thai anyway.

I like a lot of bottom end in curry, the onion and garlic powder add a lot as well as the cream. I don't like red curries where you have the heat but not the bottom flavor.

I basically combined two recepies that I saw on taste of history about the caribbean and another cooking show with an indian curry
