As for someone who has only ever had one bar that had other shit mixed in, no, it is not. It's literally cacao that hasn't had any time to actually develop the bitter cacao flavor. So it's just basically nothing. You will often see ruby chocolate get mixed with raspberries or other sort of flavors you would associate with red. It's all to mask the fact that you are eating a bunch of filler ingredients to give it the same silky chocolate texture but without any flavor whatsoever.

No. It uses a small amount of cocoa powder which has undergone a chemical reaction that forces the anthocyanins in it to turn really red. When mixed with white chocolate it turns pink. Considering they most likely acidified the cocoa beans there might be a tangy/sour taste.

I had some last year and it certainly has a different taste, it was actually pretty nice, it had a tangy but not sour or offputting taste but it is actually really hard to describe.
