Since I've been fermenting my own hot sauce for a few years now, I think my next project is going to be fermenting a mustard. Seems like you can tweak it by adding a piece of horseradish, garlic, hot peppers, different peppercorns, etc. Seems like you could really get what you want out of a mustard with very little effort and have the satisfaction of knowing you beat big mustard at their own game.
