Theyre both really good. Essentially used spiced bacon. Both are used for essentially the same purpose in similar dishes, but guanciale is alot more difficult to come by at least by normal means in the UK. I can order the stuff online but I can buy pancetta in the supermarket.

Here's one version of Pancetta I've made that came out quite good. As another anon said, a spiced belly bacon but not smoked.
