Man, Polish food is fucking awesome.

I just discovered that I have a Polish grocery store nearby that makes its own hot food. You can just get fresh-made pierogi and golabki and whatever and eat it there for lunch. Cheaper than a restaurant too.

Polish pleb cuisine which is most of in-use cuisine as well as what migrated to the west is what happens when you're poor as fuck, got limited ingredients but want to eat good food. Pic related is podpłomyk, an old Polish thin crust "pizza" that traditionally doesn't use yeast so it takes a few minutes to put together without the growth times.

The noble Polish cuisine is a whole another story. It got benched 200 years ago due to wars and occupations and stopped improving. The high class cuisine was (to describe it easily and comprehensively) something between slavic, french and arabic. It's only now, that we're slowly recovering from 200 years of "occupation mode" that it's getting it's ambitious Escoffiers.
