Mainly decorative. The colorfulness appeals to children and certain types of adults. They don't have much flavor and the texture doesn't work very well with most of the desserts they're usually used on. Years ago I learned that you could mix them into cake batter and they would dissolve into colored spots. I thought that was pretty neat.
