I like it but I always get this weird cough after eating a bowl of it. happens every time. I think it's one of the spices they put in it. I start coughing like crazy and folks ask me if I'm alright. I try to explain between coughs what's going on but only manage to tell them "pho cough"

I wasn't saying it like it's really a bad thing. Most pho places have crazy turnover so it's not like you're not getting fresh noodles - it's just funny how they're shaped like the box. I'm >>12151901 and the "rare steak" is that red stuff in the bag. It's actually completely raw, thinly sliced beef that they portion and freeze. It's only cooked when you pour the broth over it. I've said in every thread that pho is highly underrated as a take-out item. You may need to reheat the broth a little when you get home, but because you add everything yourself to the hot soup it's comfy as fuck to have at home.

They actually kind of suck, but they're the only place around that even has banh mi. It's fucking crazy. The last 3 places I lived I could get a really good one for around $4, and not just boring shit like "bbq" pork or chicken; I'm talking that liver pate and those distinctively charlie fart cold cuts on that super light and fluffy demi-baguette. Fuck I need to move.

I've had Chicken Pho lots in Hanoi, nearly every day for breakfast.
Most places would still use beef bones for the soup though.

The core is a really good beef stock based on the french technique, but with Vietnamese twists like some fish sauce and lemongrass.

The solids are typically:
Rice noodles
Raw onion
Fresh coriander leaves
Some type of meat. Most basic is thin-sliced steak, put into the bowl raw. But other cuts and stuff like tendon and tripe are common as well.

The pour the boiling-hot stock over, which cooks the meat pretty much instantly.

Then you get some bean sprouts, fresh basil, limes, and sliced peppers on the side to add as you want, plus usually a selection of sauces you can do what you want with, though a "normal" use is to put some hoisin and sriracha on a dipping plate and dip your meat into it.
