I think I might be the only person I've met who's just never liked cornbread. I mean, I've never really been into bread that you need to add butter or honey to in order to enjoy, and it's just so crumbly and messy even before adding those things that I've never seen the appeal. Just throw some masa into your chili while it's still on the heat if you insist on adding corn bread to chili; not sure what else it's good for.

There's two kinds of cornbread. Northern cornbread is dry and cakey like in OP. It's usually sweet, too. Southern cornbread is rich and dense, with only a little sugar if it's added at all.

There needs to be a distinction between sweet corn bread and regular corn bread. Sweet cornbread is basically cake. It should be called Corncake. Regular cornbread is plain and dry as fuck. So dry in fact that you can toss it through a window.

I think one reason a lot of cornbread is dry is because it probably needs to sit for a while for the cornmeal to soak up liquid and rehydrate before baking. Even regular flour isn't fully hydrated until like 10-20 minutes after mixing with liquid. Try letting the batter sit for like a half hour or even an hour before baking next time you want to make it. And use buttermilk instead of regular milk, since it's thicker you can add a little more for more moisture without making the batter too thin.
