I think most people probably should go vegetarian for a while, especially with how disconnected people are from food production today. People mindlessly eat meat every day, with no respect for the fact that an animal had to be killed for it. I always hate seeing people throw away meat for no reason.

But, I went vegetarian for a couple years until my body was telling me I needed to eat some meat after I became more physically active, and now I know what it feels like to eat it because my body needs it and not just because it tastes good. I only eat it about once per week now, and if I have it more often than that I actually get sick of it. And I'm okay with eating meat, but I still hope stuff like lab-grown meats gets into stores soon because it still kind of sucks that an animal has to die for it, and if we can have meat without killing for it I don't see the downside to that.

fermentation is best thought of like gang warfare. The idea is to give your gang (the "good" bacteria") a head start so that they can get their colony established. Once that happens they protect their turf and prevent other bacteria from taking over. This usually happens because the "good" bacteria secrete lactic acid. They can survive the acid, but other bacteria cannot. It's a simplification, but it should get the general idea across.

Sure. The problem is what happens when OTHER bacteria happen to start growing too. Do you want to give yourself botulism, for example? Hell, the word "botulism" comes from the Latin word for sausage because fermented sausages were one of the main causes of the disease prior to modern sanitation in food prep.
