Thought this sounded good, although I'd probably use milk or half&half instead, and top with lots of pepper and maybe some parsley.

Cream of Corn Soup
2 lb cut fresh yellow corn off the cob
12 oz sliced white onion
2 oz butter
3 cups heavy cream
2 cup water
1 level teaspoon salt
Find the freshest corn you can and cut it off the cob making sure you scrape the cob to extract all of the milk. This is the sweetest part of the corn. Saute the onions in a thick bottomed pan until soft but not brown. Add the rest of the ingredients and bring to a boil. Simmer for 10 minutes and remove from the heat. Place in a blender and puree till smooth. If the corn is not sweet you may add a little sugar to taste. This may be done ahead of time and kept warm in a double boiler.
Serves 6-8

I've made a very similar recipe. You don't even need the dairy. I use vegetable stock. Better yet, make your own veg stock, including the cobs after you've scraped 'em. It's god-tier delicious. Add a little marjoram to the seasoning as well.

Let it get overripe so it's extra sweet, then oven in foil with slab of butter. 450 for 25min. Then top with tajin and cotija cheese.
