In greece almost all Gyro is made with pork

outside of greece the lamb/beef cylindrical shaved meat version is more popular, probably because it is a bit cheaper and is kosher/halal and until recently only middle easterners and greeks ate it.

Nope it's a greek one.
Cypriot pita is oval and you cut into it and put stuff in it instead of wrapping things with it.
Also I believe that any meat is ok as long as the fillings are the right ones for that meat. The standard fillings that go with everything are tomato, onion, tzatziki and fries.
Also tzatziki with dill is a gross mistake.

Parsley yes but tahini isnt normally included. If you order kebab it wont come with a sauce. It will have your meat, kebab and/or sheftalies and a salad that consists of cucumber, tomatoes, cabbage and onion and sprinkled with parsley. Some places omit the cabbage and other dont dice the onion in the salad but give you half an onion as a side. Also a couple of pieces of pickled cucumber or celery are included as well.
