Because you can feed more people on a vegetarian diet that includes eggs and dairy. Simply put, not all land can be used for high efficiency farming at all times, but some land that can't be put towards high yield crops can be used for animal grazing, thus allowing more human-consumable calories to be produced from the Earth's available arable land.

If we don't use that land to produce eggs and dairy, we are selling ourselves short. Less humans can be fed. Since human life (not animal life) is the gold standard to which morality is judged, therefore vegans are the worst people, morally speaking.

Why isn't chickpea/burmese tofu a bigger deal in the vegetarian world? It's so easy to make and you can add all the seasonings while making it instead of having to marinade for hours which never penetrates the tofu more than a few millimeters anyway. I think the texture is nicer, too.

I made the switch to vegan about 8 years ago and spent the initial first years cooking elaborate shit, but laziness took over and I mostly just eat canned chickpeas with a bit of seasoning, cherry tomatoes dipped in humus, rice & beans, avocados sprinkled with seasoning (I'm even too lazy to serve them up, just slice them in the middle and use the skin as a bowl while scooping), and then the usual salads and fruit and mixes of nuts and seeds over the day. I also just drink the 'vegan blend' protein shake from myprotein (pea, brown rice & hemp). I rarely find the motivation to cook anymore. Maybe once per weekend or so. I just don't see the point in putting in the effort when I eat all alone anyway.

I've been eating a mostly vegetarian, mostly vegan diet for a few months. My staples are

>chili (beans and quorn fake meat) with cilantro lime rice
>Sunday roast with fake meatloaf, yorkshire puddings, roast potatoes and boiled veg
>Ma Pa Tofu (with quorn meatless grounds) and rice
>Hamburgers with vegetable patties (I use Dr Praeger's 28g Protein because they have the most protein per calorie).

I aim for 2000 calories, 150g protein. I'm finding it easier to hit my macro goals than when I didn't limit meat or dairy, probably because the plant protein sources are more filling.

I shall explain. White sugar is refined (purified) by filtering it through charcoal. This charcoal often comes in the form of bone char, which is a recycled byproduct of the meat industry. Most brands of "brown sugar" are just white sugar with a little molasses added back in. This triggers some vegans.

You can, however, get unrefined brown sugar made by a different process that doesn't involve charcoal at all, therefore there's no chance that bone char might be involved.

And the most intelligent method of feeding ourselves is small-scale local farms that raise crops and animals in the correct ratio. Mostly crops, few animals. The trick is to celebrate the flavor of your plant diet instead of mourning the taste of meat. Using tofu or seitan or any of the meat substitutes is going to be a cheap imitation of something that exists in a better form, there should instead be a focus on a flavor and texture that meat would not directly improve.

Mushroom Stroganoff
3 T. Butter
1 Large Onion, Chopped
¾ lb. Mushrooms, Sliced
1 ½ C. Vegetable Broth
½ – 1 C. Sour Cream (to taste)
¼ t. Garlic Powder
Soy Sauce to Taste
Fresh Parsley
8 oz. Egg Noodles
Cornstarch

Melt the butter in a large heavy skillet over medium. Add the sliced mushrooms and cook, stirring frequently. When the mushrooms begin to get tender, add in the onions. When the veggies are cooked to your tastes, stir in the broth, scraping off the bottom of the pan for any tasty browned bits. Bring the broth to a boil and cook until it has reduced by about 1/3. Stir a few spoonfuls of cornstarch with some cold water until smooth, then stir in to thicken the sauce. Meanwhile, start boiling water for the noodles. Turn the burner to low. Remove the pan from the heat and stir the sour cream into the sauce. Season with garlic powder, salt, pepper, and soy sauce. Serve over the cooked egg noodles. Top with fresh parsley, if available.

15 oz. Cottage Cheese
4 C. Packed Fresh Spinach Leaves or 1 (10 oz) Package Frozen Chopped Spinach, Thawed & Drained

25 oz Jar Marinara Sauce
2 C. Shredded Mozzarella (About half a regular size bag)
1 t. Italian Seasoning

Preheat oven to 350. Bring a large pot of salted water to a boil. Pour in the shells and cook according to package directions, just until al dente. Drain the cooked pasta and let cool in the strainer until warm to the touch. Meanwhile, if using frozen spinach, squeeze out any excess water. If using fresh, heat a skillet over medium low with a pat of butter. Add the roughly chopped spinach and season with salt and pepper. Cook, stirring frequently until greatly reduced but still bright green. In a medium bowl, mix the cottage cheese, half of the parmesan, half of the mozzarella cheese, and the seasonings. Pour half of the sauce in the bottom of a 9x13 pan. Tilt pan to cover the bottom evenly with sauce. Spoon the cheese filling into the cooled shells, placing them in the baking dish. Spoon remaining marinara over the shells. Sprinkle the remaining cheese over the shells. Cover pan with aluminum and bake for 25 minutes. Remove the foil and bake for another 5, until the cheese is melted and gooey. Makes one 9x13 pan of shells.

Notes:
You can freeze unbaked shells for up to 2 months. Cover tightly. You can thaw them out the night before in the fridge, or put them straight in the oven frozen and bake for 1 hour.

Guys, is there some vegan type of 'protein bar' (for lack of better term) without soy that I can make at the weekend, then store in the fridge and consume during the week. I'm thinking larger batches.

I looked at the 'Burmese tofu' made from chickpeas, but my initial thought was 'why no just eat chickpeas then?' Basically I want an easy recipe to make some kind of astronaut food that give me a shit ton of protein and tastes alright. I'm tired of eating canned beans every day and I don't really have the time and ambition to cook during weekdays.

It's hard to find any wholefood vegetable source of protein as dense as soy. Chickpea flour only has half the protein as soy flour.

Just go the chemical route and use pea+rice protein powder mix and find some protein bar recipe.

Yeah I've been doing that on training days. I drink shakes with a mix of rice/pea/hemp protein and normally I get sufficient amounts from eating chickpeas and other beans. My question was more in regards to change of taste, but if I'm being honest with myself, the real problem is my laziness. I just can't find the ambition to cook and always end up eating them out of the can. Just sprinkle various shit over it like curry mix with olive oil, soy sauce, or some herbs.

God I wish I wasn't such a lazy prick or had a gf that would cook for me...

been meaning to try this one, never cooked with wine though:
French Lentil Soup
3 T. Oil
1 Large Onion, Diced
2 Stalks Celery, Chopped
6 Cloves Garlic, Smashed
2 Bay Leaves
1 T. Tomato Paste
1 ½ C. Red Wine
16 oz. Dried Lentils, Sorted and Rinsed
6 C. Vegetable Broth
2 T. Dried Thyme or Oregano
1 T. Dijon Mustard
Pepper to Taste
Fresh Spinach (optional)

Heat a a large soup pot over high heat. Add the oil, onions, and celery. Saute until they start to take on color. Add bay leaves and garlic. After two minutes (or if the garlic starts to burn)work in the tomato paste and wine. Reduce by ¾. Add the lentils and enough broth to cover with a couple inches of broth. Simmer uncovered, occasionally stirring and adding enough broth to cover. Cook for 40 minutes, or until the lentils are tender. This makes a lot of soup, and freezes well.
