scrape the skin off some ginger, grate it and then mince with a knife, or microplane
mince a few cloves garlic
maybe a chilli if you have it

fry them in a little oil until they brown
add some (clear, not dark) chinese cooking wine. These are very very cheap. Sake works too. Or white wine, or stock, or even water.
add a tsp of sugar
simmer for a couple minutes

now if you want to flavour it more, you can add a little rice wine vinegar, sesame oil, soy sauce, fish sauce, chilli oil, whatever you want. But that's the base.

simmer a little longer, taste, adjust seasoning
If you want a thick sauce, stir a few tsp of cornstarch into equal parts warm water, then pour in the slurry and cook a little longer

If you want it with meat, season, then fry the meat first, remove to rest, slice it, then add it back at the end with any juices. That way the meat with flavour the sauce, and if you've undercooked the meat, just cook it a little longer in the sauce.

If you want it with veges, throw em in with the wine, and maybe cook a little while with a lid on.

Rice and curry gravy (vegetable broth thickened with a curry-powder-flavoured cornstarch slurry) was a staple of my childhood.
Also rice with "Chinese" gravy (sweet and salty soy sauces + pork stock cube + water, thickened with a grated-garlic-and-ginger-flavoured slurry).

Thai: Add lemongrass and tamarind sauce, maybe chili paste when you're frying things as well. Finish with fresh squeezed lime just before serving to preserve its freshness
Japanese: Go with mirin for sweetness, and otherwise use cooking wine or vinegar coupled with generous amounts of ginger and soy sauce
Chinese: Sugar, red wine vinegar/chinese vinegar, szechuan pepper, dried peppers.
