Most European anons don't have to travel to the "bumfuck areas of Europe" since many countries are closer in proximity than our states. Also, rural areas in Europe are probably more authentic since they have been practicing the same type of recipes for hundreds of years, anyway. A random hipster place in NYC or LA wouldn't compare.
