The South was still majority English. A major difference was that the Anglos in the North were mostly from the south of England while in the South, the overwhelming majority were from northern England. North England was still semi-nomadic due to cattle and sheep herding, and there were still remnants of pre-Christian Anglo-Saxon honor culture while there were no such thing in south England by the 18th century.

People were culinarily retarded back then. There were no commercial meat farms and meat only breeds. There’s was 2-3 types of chickens and they all were used for eggs and butchered when they were old, tough, and gamy. Most of the food at the bottom of the chain was reserved for blacks, and chickens weren’t seem to be as valuable as pork or beef. This is why you see black people have affinities for really particular food items like: chicken, greens, black eyed beans, hogs feet, chicken feet, chitlins, cracklins, etc. Once it became more common knowledge on how to prepare certain food items, more races and classes adopted them into their diet. I forget what it’s called but children have an incredibly high tendency to develop strong attachments to things they grew up with or saw their parents use or do so the cycle keeps perpetuating
