Sandwiches are pretty subjective friend. But a cool trick is to melt the cheese on the sandwich. Experimenting with different breads may help.
I've eaten the same sandwich for 15 years. Just a turkey and cheese on sourdough.

If it's a lunch sandwich, stick with cold preparations. At most, something that can be toasted in a toaster oven. That means OP will need to bring the sandwich in separated form: bread slices, cheese, meat, and veg each in its own container or zip bag. If your workplace is remotely civilized keeping some small condiment containers in the fridge won't go wrong.

Stole this from Tropical Smoothie.
Flatbread, sliced chicken breast, pesto sauce, 2 slices of roma tomatoes, and shredded mozzarella.
Quick to prep if you use leftover chicken. Pesto makes it messy but I like it. Healthyish meal too so yay :)

Quality ingredients makes a big difference. If you're on a budget you can spruce up a sandwich with some nicer mustard and spices. Quality bread isn't that much more expensive either, and will make a world of difference.

Nah, I go with wraps, OP. Three or four good-sized whole collard greens for the wrap, stuffed with a carrot, sliced into strips, on a bed of hummus with cucumber slices. The collard greens I get come bundled in big rubber bands which I use to keep the wraps bundled up in a container.

Peanut butter and marmalade is a favourite, best PNB is without added sugar. Or PNB and salad, Tom's, cucumber, leaf. Or on buttered thick sliced wholemeal bread, sliced tomato and onion. Made the night before and kept in a fridge. The onions soften and tomato juice invade the bread, could use PNB as well. Bon appetite.
