Did his nonna chase him out of town with a shotgun? I can't even get away with making my own pasta with my family - has to be granny's old nicotine stained hands, and "her recipe"... it's paste. It's literally paste. You make glue, and then you add more flour, then you try to rectify that by boiling it. Once you can stick drywall on with it, it's good to go.

Family issues aside... it's a regional variation. There are variations on pizza across Italy and the US. Chicago's just happens to be more like a "tomato cheesecake" than others.

There should be enough meat, cheese and filler/toppings to hold the slice together reasonably well - at least as well as a slice of lasagne. A pie server/spatula should do the trick of getting it to the plate, and a knife and fork should do the trick of getting it to your mouth. Some hold together well enough to eat with your hands, but it's a gamble at best.
