I make my pizza dough with pizza flour (higher protein content than regular AP flour) and higher hydration. Recipe:
500gr pizza flour
350gr lukewarm water
10gr active dry yeast
30gr olive oil
16gr salt
Mix and knead until gluten is well developed, mature the dough in the fridge overnight.
This dough makes very soft and easy to work with pizza bottoms that have a very nice flavor

Cooked first. Fried rice is a "using up leftovers" dish, so it's usually made with cold rice from yesterday. Straight out of the bag would be like eating dried pasta.

I just taste it. If it's still crunchy and the water's run out, you can add a splash more and put the lid back on for a few minutes. The main fuckup potentials are drowning it and stirring it around so it ends up like mush (although that sort of rice does get used for different dishes), or getting impatient and cranking the heat until the bottom burns. Keep it low, leave it alone, and don't worry if some does stick to the bottom, that's normal.

I've made them a few times, and they're quite solid. You need to blend the ingredients properly though, or the consistency is a bit weird and possibly offsetting. Consider blending a flour out of the oats, and then mixing the other ingredients with it in a bowl. Regular full-fat butter is best, ignore the comments about olive oil.
