I’d say we Americans don’t really have a “street food” culture as much as we should. This might be due to healthcode overmanagement but I’ve never tried to open anything to that effect so I couldn’t really say.

We have some food truck culture but I feel a distinct difference since it’s seen as novel and usually reflects this novelty in the food options. ...almost like *gulp* fair foods. Overpriced, overly salty/sweet/fatty foods with diminished enjoyment replaced by increased instagramability.

The closest I personally have access to are Mexican vendors that will post-up outside of music venues at night selling bacon-wrapped hotdogs with grilled onions and peppers. It’s the LA style hotdog and after a few pints... you can sort of look past any glaring healthcode violations and appreciate the overwhelming salty and fatty taste, writing it off as an infrequent and conditionally necessary evil.
My gf tells me stories of what international street food is and what ours should be and I feel the American street food scene is comparatively a disgrace. :/

"pane e panelle" (also you must try "pane panelle e crocchè" (croquette) or the same with fried aubergines or... you can mix it as you like) is the best street food we have in Sicily, 2nd place "arancina" and 3rd "cicireddu fritto": "cicerello" is a very little fish, fried it's tasty and crunchy, sometimes the portion is served with lemon that you can squeeze over it. enjoy

Australian here. The two best uniquely Australian street foods ironically come from other cultures. The South Melbourne market Dim Sim is pretty fucking great, basically a mix between a wanton and a dumpling with lots of fresh cabbage, veges and chicken inside, can be steamed or fried and eaten with soy sauce. Extremely common side dish with our Fish and Chips.

The other is the Halal Snack Pack which overtook the Kebab in popularity. Styrofoam container with a large layer of freshly cooked chips, grated cheese melted on top of the chips, halal/kebab meat (usually lamb and chicken) cut up and scattered over the cheesey chips. Finished with your choice of sauce/s on top, the standard trio of sauces used is called the ‘’Holy Trinity’ - Chilli, Barbecue and Tzaziki. This is the single best meal to accompany alcohol.

In Malaysia they have ‘Ikan Bilis’ Which is those same little fish, soaked in water to rehydrate, then deep fried with peanuts, onions and spices. It’s delicious.
