Try pork brisket with sauerkraut and knoedle. We have some dishes where putting unnecessary shit into it doesn’t really make any good.
Slow roast nice piece of pork brisket seasoned with salt, pepper and caraway seeds togwther with onions and garlic. In the last 10-15mins broil it to get nice crispy skin.
Sauerkraut is usually seasoned with salt, pepper, caraway seeds,bay leaf, juniper berries and allspice. Find your favorite spice combo. Stew the sauerkraut until it’s soft but not mushy and also the liquid from it is almost evaporated.
Problem with knoedle is to find the right flour. For standard knoedle, you need semi coarse flour which I am not really sure you will be able to find.

Burger anon here. I was stationed in Germany for a year and I can 100% confirm, the food is great, fantastic even, it's just that German food tends to be non-pretentious, comfy and filling, so it doesn't "feel" like some $300 a plate fine dining experience, as a whole. Knodel are fantastic, a good pork steak is amazing, and there are countless other things that are just great. Austria is a definite S++ teir too, but i'd place it over German food (sorry fritz).

Fun fact: many, many americans think a schnitzel is a sausage.

I think a friend of mine (German here) summed it up well once, when he came back from a trip to Rome. He said the food was great there, but the servings were so small. If you go out and eat in a restaurant in Germany, you call it good if you end up being super full and even have leftovers. If it tasted relatively well, that's a great bonus, but it's not the most important thing, because if it is filling it will taste great to us no matter what. In Italy, as his example goes, if you go into a restaurant you will likely get utterly great food. But you won't be stuffed to the brim when you walk out. So a German will likely complain about it more than anyhting.

Our kitchen is all about getting full, not about being fancy. So I can understand why an American will like it.

I know it's a meme, but there's lingering german and czech influences in Texas. We kind of fuck it up and it's an imitation, but it's there. In texas, kolaches are extremely popular breakfast foods, but we call both savory (sausage) and sweet (peach, lemon, etc. filling) kolaches, not kolache and klobasnik. Same too with having a schnitzel-type dish that is also common in german settled areas (montana comes to mind), but we call it "chicken fried steak" because america. It's also a tenderized beef or veal cutlet, never pork. When I was in Germany I remember going to several places that had in-store or in-location cafeterias, they really reminded me of a popular place in Texas back home, Luby's. The service (cafeteria) is pretty much identical, and the idea of the food, that is home-prepared-but-time-consuming dishes is identical.

I can only talk for my own region in Northern Germany, not sure how it is in other regions. You should keep in mind that Germany isn't all that homogenous and different regions have different cultures.

We mostly have stuff you would expect from the Netherlands, actually. Lots of minced meat like Frikadellen - duh, Hamburger are from Hamburg - and fish. Bismarckhering is really underrated, but there is also smoked eel or Schillerlocke. And, yeah, Mett. But I think that is well liked everywhere in Germany. Kasseler was already mentioned, you eat it with kale or red cabbage.
For sweet stuff, my mother used to make "Mehlpüt", which is similar to stuff like Dampfnudeln or Germknödel you can see here >>12064829 or here >>12061741.
Also, Northern Germany has some seriously dark dark breads. I only noticed this when I moved into Nordrhein-Westfalen and couldn't buy proper black bread anywhere. Plus, we have Jever beer, which is super dry.

Also, a specific region in Northern Germany has some of the highest tea consumption per capita in the world. Drinking tea, while eating Teekuchen ("tea cake"), is an important part of our day to day culture.
