mandolined and then lots of salt and pepper and i'll let them sit for a while to dry them out a bit so they brown better on the grill

This didn't really get long enough in the marinade but meh.
I'm gonna simmer the marinade for a while so I can baste with it and not cross contaminate and it's a bit thicker.

How long approx do you think this will take on a very hot grill with the lid down? 15 mins?

I think this is basically it. I'll grill the meat. Heat up some leftover rice.
Maybe I could put some more chilli on the meat and make a mint cucumber yogourt tzatziki type thing to contrast that but it might be too much with the pomegranate taste.

How big of a grill is adequate for 1 person (with maybe some guests every now and then)

How much is an average price for said grill and how often/when do they go on sale?

Any other grill tips? Looking to get charcoal

Have a look at little yakitori grills in general, if you just want something comfy for 1 person. Iunno how effective exactly they are but they seem comfy.
