I've three beers brewing at the minute and other planned for tomorrow. 2 are mixed culture, 50% pilsner, 25% spelt, 25% rye, no hops, lacto delbrueckii and acidophilus for two days at 40C then pitched gjernes kviek, few days later allowed to cool to 23C and pitched brett C. Been a month, one got kiwi, coconut, raspberry, hibiscus. Other figs, chokeberries, orange flesh, juice, peel and orange blossom. Other beer is an all brett NEIPA. Tomorrow I'm brewing an imperial stout for barrel ageing, sour cherries, cocoa nibs. On keg I've a cherry sour, a blueberry sour, a citra rye kviek, a simcoe centennial session pale, a gin botanical saison, a raw/spontaneous ale. Some other stuff, but I can't remember what is in those kegs, they are mostly done and will get dumped when I need to package newer beers.

If we're talking real-deal, La Chouffe, Saison DuPont, Trappistes Rochefort, Westmalle, St. Feuillien, St Bernardus.

For belgian-esque, Brewery Ommegang out of NY does some pretty good bottle-conditioned stuff, like three philosophers and hennepin saison. So does the Bruery, though their stuff tends to run a bit more expensive. Boulevard Brewery from kansas city has a few good belgian-ish ones like sixth glass and bourbon barrel quad. Trying to think of more, but that's a good start.

Breweries here are chronic trendchasers because of how competitive the market saturation forces them to be. So you see a lot of breweries trying to one-up each other with exotic flavors that their neighbors haven't put out.

You have to tell me where you live. NEIPA is super regional and most of the best examples don't even distribute. If you're in the northeast, take a trip to Other Half or Trillium. If you're out west, look for Great Notion, Alvarado Street, Monkish, or Pure. In VA/MD, look into Answer, the Veil, Burley Oak, or Aslin. Indiana has 450 North. Texas has Spindletap. Louisiana have Parish. Not all of these are equal, but they're pretty much the best examples of haze in their regions. Everything else is a step below and generally middling.

In my circle of haze traders, the upper midwest is honestly a NEIPA desert. The only widely sought after haze cans from the midwest are 450 North, who do a Nuggets series that is very respectable. 450's more popular line is their Slushy / Slurpee series of heavily fruited berliners with a thick texture. Their haze is good, and the only NEIPA I can personally recommend from the region.

My homebrew - roughly 70% pilsner / 30% wheat, with a touch of corn and wheat flakes to give it a lot of body and dry finish. Came out to ~8.1% ABV. Dry hopped 4 days with amarillo. Used a blend of two yeasts, one for a french style saison, and one for a farmhouse ale. Fermented starting at 68F ramping up to 78F over 10 days. Kegged it on Wednesday of this week.

funkwerks saison. A strong but obviously american version of the style, ~6.8% ABV. Highly fruity finish

Overall I'm very happy with how mine came out. I was not at all trying to emulate the funkwerks but I enjoy comparing my results to something I can buy. In a few weeks i'll be comparing against the saison dupont cuvee which I picked up today.

The funkwerks has a strong fruit flavor on the back end and is more highly carbonated whereas mine the hop flavor penetrates the yeast profile a bit too much and has a stronger body. Giving it another 2 weeks in the keg will mellow out the hops and should create a more balanced saison

I would say the best NEIPA I have had from the region are Old Nation is Michigan near Lansing, Hop Butcher in Chicago, Eagle Park in Milwaukee, and Brewing Projekt in Eau Claire near Minneapolis and of course Toppling Goliath in the middle of nowhere Iowa while not specifically very NEIPA focused makes some excellent ones

Looked it up and it opened after I moved away, but I regularly ate at the 2-3 restaurants that were in that location before that. I can't think of any of the names, but the owner of the last one also owned Sushi Blues, which was on the second floor of Ching Young over Pizza Hanalei (which has probably closed). Just looking at Google maps I'm happy to see Hanalei Gourmet is still there (ate there probably once a week growing up), The Dolphin, Postcards (was never good but a friend's mom was the chef), Hanalei surf shops (both the old Hanalei School one (where I shopped for clothes as a kid) and the one in Ching Young Village (where I bought pogs after Iniki). Theres one brewery near me called Montgomery brewing that makes a classic dipa that I love from time to time. Piney, oily, nice malt to it with little bitterness. what are the best beers for someone not looking to become an alcoholic? there seems to be a huge bias in favor of high abv beers (i guess bc they tend to be "complex") but i cant drink a bunch of imperial stouts all the time. i wish i liked cheap beer but every adjunct lager ive tried has been too sweet (bc of the corn i think?). i do like dry stouts but i wish i knew of more besides murphy's and guinness.

Pale lagers rule. There are usually plenty of 5 - 6% stouts released every winter. Same with all types of pale ales. Pinner from Oskar blues is actually really damn good and only 4%

Recommend me some good flavorful beers. I found I like stout and saison the most but I don't think I have much of a taste for beer as I always want a good bunch of flavor while most things tend to be about the aftertaste factor.
Do I just have shit taste or do I simply need to find one I really enjoy? Never been into beer much overall since I tried one as a kid and it taste like absolute pisswater.
