This. Cheese, particularly hard cheese, has a long history in stews/sauces. Parmesan rinds in pasta sauces, stews, soups. Grated aged goat/sheep cheese in chilis and braises to add a subtle complexity. Potato stews have always been made with milk/cream/cheeses. The most important thing is to understand and love the cheeses you buy and understand the flavors they contribute when grated, chopped, topped, etc, and added to your dish.

I tried it. I added chopped swiss to a standard stew of beef/carrot/potato/onion/celery.
The bits looked like chewed gum and tasted like bites of a swiss-heavy lasagna. It added some pleasant flavor/aroma to the broth. Out of the 5 that ate it, 3 people liked the addition. 2 people did not.

I fucking hate cheese in food and don't understand how people enjoy mixing it into shit. I understand things like pizza or mac and cheese but what the fuck is up with putting shredded cheese on chipotle? What about a nice bagel with bacon and egg the slice of cheese fucking ruins it. I really think cheese is heavily overused in cooking and that cream sweet taste ruins a ton of foods for me.

I tried Popeye brand canned spinach once. It was terrible. I usually don't but other kinds of spinach anymore because it makes me constipated when I eat a pound of it and that's how much I like to have. So I get other greens instead.
