Let's have a thread for what might just be the most underrated cooking method.
Has anyone ever steamed bread/buns? I suddenly got really curious about how that'd work. Would you need to cover the cooker up? I'm talking just plain bread rolls, no stuffing of any sort.

Bavarian Dampfnudeln senpai. make a plain sweet yeast dough, let it rise a bit, form into tangerine sized balls, put those in a large pan or pot with a tight lid, let them rise a second time, pour some milk, sugar and melted butter into the pan, then simmer the yeast dumplings at low heat untiil they are aooked all the way through. Ideally all the liquid should have evaporated by then too and the sugar and butter should have formed a caramel bed for the sweet dumplings. Very simple and cheap ingredients, very difficult to get right techniquewise, like many Bavarian recipes. Lift the lid even once to peek, or have a lid that lets condensed drops of water fall onto the dumplings while cooking and they are fucked.

Anyone have any recipes for pressure-steamed breads?

I want to try getting into making more steamed breads and cakes with my Crock-Pot Express electric pressure cooker but decent (from scratch) recipes are hard to find.

Those are SO tricky to get right, I feel like a lot of food from that part of the world is way more technical than people give it credit for. Learned to make PROPER strudel recently (stretching the dough until it's literally transparently thin, brushing it then rolling it up to create the layers, rather than doing laminated dough) and it's incredible, such a neat method.

You mean mantou? Literally just plain bread rolls but steamed. They're really easy to make and the only difference between mantou and bread is the crust. You can also make lazy soda mantou with baking powder if you don't have time to wait for the yeast to work.

I once used a high pressure cooker and a plateau to cook a bun, came out fine.
Did it on pure luck though, i've messed up another time.
