Is there any cases where boiling is actually the superior cooking method, besides (sous vide doesn't count)

My gf is from Maine and makes boiled dinner all the time despite me pointing out that it would be 10x better to roast everything.

Sometimes I prefer vegetables to be steamed/boiled instead of roasted. Steamed vegetables with lemon or vinegar just feels more satisfying to eat with a fatty main dish for me. Don't really think it's ever the best option for meat though.

Generally when making soups/stews, boiling/simmering is the best method. You can shortcut with pressure/slow cookers, but I find these results aren't quite as fantastic as when done in the pot over a stove (largely due to order control you lose in pressure cooker and crockpots).

Cooking pasta also is the other place where boiling is correct and the best method.

Hard/soft boiled eggs are also the other useful case, though sous vide can generate much better results in a more repeatable manner.

Well, with a boiled dinner, you're usually cooking a corned beef brisket. Simmering it low and slow for several hours is the best way to break down the connective tissue and release the collagen, making for tender meat.

The issue is timing. That brisket needs 7 or 8 hours at 200 degrees, which is enough to turn veggies into mush. One thing you can do is cook your corned beef the night before. Or, start it in the morning, cook it and set aside to rest a while before serving, then use the water from simmering it to steam or boil your cabbage and potatoes.
