there was a vegetarian cottage/shepherd's pie recipe that used lentils instead of beef/lamb and it came out pretty good. don't have the exact one but you can probably find similar.

One I just throw some stuff together and it worked nicely, haven't done it in a while so the liquid measurement is probably fucked up.

>1 cup red lentils
>1 cup chicken stock (again, forgot the liquid to lentil ratio)
>tablespoon tomato paste
>Garlic powder
>salt
>pepper

Was the first time trying lentils and was pretty damn good.

>No pancakes

Step it up, /ck/. Lentil pancakes can be made with any sort of lentil, have great satiety and come in a huge number of tried and tested recipes. Search for 'Adai Dosa'.

Basic recipe

>1 cup mixed lentils (ideally including pigeon peas and chickpeas/garbanzo beans, which are routinely used as a dal in India but are missing from your image)
>1/2 cup water
>3/4 inch ginger root
>1/2 tsp cumin seeds
>small habanero pepper, seeded
>1/4 tsp salt, or more as necessary

Rinse and soak the lentils in water overnight. Pour away the water and rinse again. dump the lentils into a blender along with the remaining five ingredients. Blend to a slightly grainy batter, about as thick as yellow mustard (a little thicker than American pancake batter). Pour a ladleful into a large greased griddle and spread it by spiraling outwards with the back of the ladle. Once the center looks set (maybe fifteen seconds?), pour a little ghee around the outside, wait thirty second and flip. Cook a further thirty seconds until crisped around the edges. Serve with chutney, youghurt dips or whatever the fuck else you want

Lots of dosa recipes will include uncooked rice, too, which can make them cheaper if that's the goal. If cheap isn't the goal, you can go crazy with different spice mixes and combinations of dal.

That's pretty standard. You can also use tvp that way, it's crazy cheap. Might have to go to a health store tho.
