Cavatappi for mac and cheese isn't really a secret for anyone who's left the basement in the last decade, as it's the standard restaurant noodle. Still kind of unbelievable that there are anons who think fucking shells of all things is good for mac and cheese. Pro-tip: it's the worst, and without anything chunky to find their way into the shells they're just going to stack up on top of one another and make for a terrible experience.

Depends on the sauce. Some pasta has more surface area, more nooks and crannies, that's perfect for a thin sauce. Some pasta is thick with very little surface area, that requires a very thick sauce. Italian guide to checking if your combination of pasta and sauce was right:
>If the plates come back plastered in sauce, you screwed up.
>If the plates come back slightly covered in sauce, your sauce stuck to the pasta. Good job.
>If the plates come back into the kitchen sparkly clean, the sauce was so good they used table bread to clean it up.

I don't understand this practice of putting enough cheese for a single bite on top of the dish.
For practical purposes you either avoid the cheese for health reasons or you put enough to actually have it be a component of the dish, I'll never understand the mindset of cheese being a garnish.

My personal go-to pasta is linguine, although I appreciate that each pasta has its use.
