Why are black people considered masters of spices? 80% of their "spicing" is just "ayo put sum hot sauce on that bitch, nigguh".

Spicing in Western African cuisine is even more simple than soul food and many times doesn't exist. Black African cuisine is bland in general. The only exception is East African cuisine because Indian and Arab influence.

That's only partially true. Other poor communities don't have the same rates of illness as african americans. A lot of it is very unhealthy culinary traditions being passed down generation to generation. The foods that many african americans cook as staples aren't inherently unhealthy, it's the way they prepare and cook the food that makes it so high in fat, sugar, and sodium.

Western African cooking changed with the introduction of tomato and garlic, you also have to remember that things changed with radical depopulation.

The spices of Western Africa have also been drastically reduced with the introduction of Maggi Cubes.

Black diasporan cuisine in say like Bahia, Cuba, Puerto Rico, Louisiana, etc... Just retain certain aspects that were dropped elsewhere.

I for one can't stand standard Nigerian foods obsession with tomato, but have had the traditional foods of the Jos Plateau that used wild alliums, cresses, fermented powders, tamarind and an assortment of local spices. It reminded me in many ways Louisiana Creole cuisine.
