Precisely. Render most of the fat and you'll get crispy shards of umami without the excess calories.

Every time we roast a joint of pork, and it is about 90% cooked, we remove the skin with a sharp knife taking care to leave most of the fat on the meat. You then use a spoon to scrape as much fat off the underside of the skin as possible and put the skin back in the oven suspended over a vessel that will catch any remaining fat as it renders and drips off. Eventually you'll end up with a large shard of super crunchy skin you can break into pieces and share round.

Never said that fat is not good for you , but depends really on the fat; monounsaturated fats and polyunsaturated fats that produce high-density lipoproteins (HDL) are proven to be good for our health (in that it removes LDL cholesterol form our bloodstream) and thus protects against coronary disease and lowers the chances of a stroke later in life. These are usually found in fish, fatty vegetables like the avocado, raw olive oil etc. On the other hand trans and saturated fats while they make everything so fucking tasty are literally the reason we get coronary disease (because we tend to abuse them). Obviously they are all needed in a moderation for our body to function properly(aka lower our ldl and raise our ldl cholesterol).

They're good, I get them once in a while. This supermarket near me sells big ass bags of fresh cracklings, and huge ass sheets of rinds that you break into pieces yourself. You can buy the pellets and cook them yourself.
