You shouldn't substitute rye and whole wheat flour by volume, that will give you a very inaccurate result. You'll want to substitute by weight and probably increase the liquid a bit to compensate.

Years back, Popeyes' did make a great biscuit. It was tender and buttery. But they have definitely changed their recipe, likely to reduce trans fat. The closest thing to what it used to be that is available today is a Hardee's biscuit. Imagine that but even more buttery. If you have a Copeland's, you can get the original style, though.

Was going to make the choice today, but ended up going to a Chinese restaurant for the second time, bad choice, another bad meal. However, KFC is tasty but never get enough mash and gravy unless I order a second one. Popeyes is always a crap shoot. Either fucking drama in the restaurant (I live in Detroit) or everything is good though the last time I went there they didn't have any thighs.

I like mash and and gravy and Popeyes sides are bigger. So cheap, why do they chintz on this at both places?

What should I do?

Biscuits without gravy are pointless.
