We have pasteurized cheeses here. They are dirt cheap and taste of nothing. You have to go for the unpasteurized ones which are aged. Cheddar for example is a great example. If it is mature or vintage, it is awful to shred as it crumbles up in your fingers. The crap you buy in bags is nasty and perfect shreds and flavourless. The whole point of cheese is the taste and texture. Extra mature and vintage cheddars have calcium lactate crystals in them. This is what makes them crumbly.
