At what point should I consider myself a decent cook? I'm a 30 yr old single male and I want to impress girls that I know how to cook once I start dating again soon.

I know how to make the following foods but I think everyone else knows more about cooking than I do for some reason.

>spaghetti (with really good sauce recipe)
>chicken fajitas
>beef fajitas
>chocolate cake (no mix)
>lemon cake (no mix)
>good burgers
>good pizza
>pan fried potatoes
>2 types of salsa
>guacamole
>crispy baked tortilla chips
>ranch style beans and refried beans

I'm still practicing some other recipes from videos but I'm not confident to say I know how to make them yet.

Nah dude. Most women dont even know how to fry a fucking egg or make oatmeal. Practice makes perfect, keep on cooking dont feel intimidated if your dish comes out shitty, and learn from it.

Most people in general just completely suck at cooking. My boyfriend raves about how I'm an amazing cook, but in reality I only know how to make a handful of recipes pretty well and rotate them so he doesn't get bored/catch on.

Just be sure to hit a couple of different niches.chinese, some kind of pasta, mexican, maybe a curry, and have a go to recipe for a steak dinner and sides to go with it. never date a vegetarian

I made the whole dinner minus the turkey + 4 desserts, chocolate custard pecan pie, apple pie, lemon meringue pie, and pumpkin cheesecake.

Cornbread stuffing, twice baked mashed potatoes, sweet potato casserole topped with homemade marshmallows, cranberry sauce, etc

Honestly OP, just learn some fundamental technical aspects of cooking, like how to cook a steak properly. Learn how to create a broth, and a good omelette, and you'll just end up knowing how to pull off recipes.

Do you have a pressure cooker?

I usually start with chicken wings although any off-cuts of pork, chicken or beef work.

Option to roast bones in oven at 400-450 until brown. Chicken wings have a lot of gelatin and work great. Pork knuckle bones are gr8 too if u want porky but chicken wings are cheap and easy to get. Boil for 2-4 hours, I usually pressure cook em with cold water for 4 hours. You can add carrots and onions, roughly chopped (no need to peel carrots) if you want, but lazy gravy is just chicken wings boiled/pressure cooked until falling apart in water. Strain, reduce to 3-4 cups.

Make a roux, flour butter in equal parts, add reduced stock and season to taste.

I can't claim to be an expert myself, but here's my general gist.

A lot of cooking comes down to following recopies, and sticking to them. If you're looking up a recipe online check the comments for suggestions, but otherwise the only reasons to deviate from recopies is if you have to because your ingredients are lacking and you have to improvise, or if you think that you have a better idea than the recipe does. Sometimes you're right, sometimes you're wrong, and the only way to know for sure is to experiment. You'll start to get a better feel for things the more recipes you make yourself. Try multiple different recipes for the same dish and see what you like about each one, then try your own version. If you've got a decent spice rack, try throwing a little something extra into your dish if you think the taste is lacking. Try to figure out what every spice in your home can be used for.

The most important parts of cooking to me are practice and trying new things. You start to pick things up as you go, little things that you can apply to other recipes. Coriander can add a bit of zest to rice if you're lacking in sauces. A little bit of cinnamon adds well to carrots or tomato sauces. A bit of worcestershire sauce can give a unique taste to sausage gravy. 20/80 ground beef is almost always the best choice unless you are explicitly looking to make something super greasy or lean. Onion flakes will pretty much always improve potatoes no matter how they're prepared. Make sure that your family actually will be there to eat your Tikka Masala at the time they said they would, or your sauce is going to reduce too much. You can make a veteran Carbonara if you have olive oil, and it'll still taste great (though admittedly not as great as if you'd had the meat). Pan frying is really easy and makes almost anything taste good. All this kind of stuff builds up and eventually you can make improvements to almost any recipe, or at least know a good recipe when you see one.
