Lamb's pretty good.
Made a half rack of lamb at home the other night. Was going for mid-rare, but got medium. Wife was happy regardless, because lamb is her favorite. Made a pan sauce for it. I generally don't like rosemary, but lamb can hide it's usually obnoxious flavour properly.

Lamb isn't tiny babies, and you don't "force" them to reproduce. You raise them for about a year in which time they are reaching full sexual maturity, if you kept them you would have spiraling population of sheep eventually more than what you can feed (and no income to justify looking after them)

Basically what you wish for is exactly what happens, there is a yearly "crop" of young sheep naturally produced by the flock, and you pick them out and sell them as they are just reaching their prime
