depends, on bigger or older mushrooms it can be a bit tough, but on smaller ones it's usually fine to leave it on

Depends on the mushroom/dish but if you're cooking a mushroom where you don't want the stem in the dish you can freeze them to make soup stock later.

I cut off the stems and eat them fresh, they're the best part. I cook the rest.
