I come as a representative of /fit/, we know what we need to eat, but how do we make them tasty? Post good chicken/beef etc recipes below

ok anon, here's a curry i made for dinner;

>scrape the skin with a knife then microplane fresh turmeric, 6 smallish pieces
>scrape the skin with a knife then microplane fresh ginger, around 1 inch
>knife mince 3 cloves garlic, and a chilli if you want it spicy, but it's good mild and fragrant
>mince a small bunch of cilantro root/stem, save the leaves for something else
>mortar & pestle / blend it all into a paste (or do this later with an immersion blender to the whole sauce, or just don't have a smooth sauce), with some salt, pepper and a little oil
>open a tin of coconut milk. If the cream is at the top, use that, if it's not, use some oil
>fry the curry paste in the coconut cream/ oil for a couple minutes, with 4 kaffir lime leaves & 3 stalks of lemongrass
>add the rest of the liquid
>simmer on very low, lid on, for 20 mins minimum, ideally an hour. Turn it off and leave it if you want.
>Bring it back to a simmer if you turned it off, and heat the oven
>season the sauce with a splash of fish sauce & black pepper (to make the turmeric bioavailable)
>debone and season with salt and pepper some salmon with skin (chicken thighs are good for this too too)
>sear it, skin down, in another pan (in hot oil) until the skin is crispy
>carefully remove, place skinside up on a plate
>transfer into the pan with the sauce, skin up, make sure the skin is above the level of the sauce.
>transfer, lid off, into the oven to cook through, only 5ish minutes for salmon, and longer for chicken.
>add some fresh lemon/ lime juice to the sauce and some basil if you have it
>pour out the excess oil from the pan you seared the fish/meat in, deglaze and cook some veges in there
