I think Chinese and French cuisine are similar, lots of long braises in their meats and a focus on the richness of food using oil/butter. Mostly the provincial stuff, not the "modernist" french cuisine.

suan cai yu is usually a safe bet. It's usually pretty tasty even in a shitty restaurant and doesn't give diarrhea.
Second choice : da pan ji is absolute kino. It needs to be in a decent restaurent though or the meat will be mostly bones which is a pain in the ass

In the Chaoyang district in Beijing there is an underground cafeteria. There is a stall where they serve "chipped" noodles. Instead of being long and thin these noodles are thick and short kind of like a chinese gnocchi. They serve it with tender beef in a oily brothy soup with medium spice. You get a giant bowl of these noodles plus a bowl of rice for 30 rmb. I still think about it from time to time.

Kokoretsi is decent. I had it in Greece multiple times. I dont love the taste of liver but its good for what it is. It doesnt taste as gross as it sounds, however I wouldnt be able to eat more than a piece or two.

When I was in greece I told my greek brother that I wanted to try it, so he ordered two full plates of it for some reason. I only ate like 3 pieces to be polite.

The only real difference in western mapo tofu is that it uses Jap style tofu, which is lower on water content than chink tofu.
