Japanese fried chicken is my favorite food in the world. And I don't just mean chicken done in the Japanese style, it really should be convenience store fried chicken purchased in Japan.

I've had karaage in Tokyo at expensive restaurants and more casual cafes, the quality and taste is simply not as good as what you'll get at a 7-11.

Having said that, I've also had fried chicken in other Asian countries and didn't think it was as good, so I can't give the whole continent credit.

They have some pretty cool tricks up their sleeves. Like adding vodka/soju/sake to their batter, par cooking the chicken then freezing it to form crystals on the surface and then refrying it for that glass skin texture, etc.

I prefer American styles of fried chicken, but there's not many places that do a great job of it in Australia. Lots of good Korean/Jap fried chicken, though.
