I'm also curious why you think this use of "sauces" seems unique to America. Read any nation's cookbooks and you'll find frequent mention of sauces being applied to foods. For example, take Mrs. Beeton's, a Victorian British cookbook. The most frequently mentioned seasoning other than salt is "Harvey's Sauce". Read Thai cookbooks and the majority of recipes use nam phrik, etc.
