When you make being homeless more comfortable or less stigmatized instead of fighting the real root of the problem you are hurting people more than helping them. This is a constant problem in modern progressivism where they end up subsidizing a problem, making it more prevalent instead of addressing the root, or just leaving it alone

/trv/estite here. I've spent a lot of time with French people in the last few years. They're among the worst I've ever come across if not the worst.

They're all jerks. The men are full of themselves while actually being really shitty people. I almost admire their confidence because they think of themselves as kings when in fact they're barely above being bums. I had this image of France being a country that produces a lot of intelligent people but it's almost the opposite, I found most of them almost rejecting academia. It was very weird.

The women have this aura around them, like they're trying to be cool but are just trashy. They're not attractive, so I guess they have to just be slutty to put out and they do that well.

The traditional French food is on point though. Cheese and pastries are the best I've had.

This is one of my favorites. If it looks familiar it's because it should be. Everyone knows about black pudding by now because of the countless bongfood threads. The main difference is in the use of filler, or lack thereof. British people put oats in their blood sausage, for Spanish and Portuguese people it's rice. This one isn't actually French, it's from the french speaking portion of Switzerland. I'm just including it because it's one of my favorite cheeses by far and everyone should get some. You don't need the girolle to enjoy the cheese although you should still aim for very thin slices. Also the girolle is just fun, so if you like the cheese, consider investing in one.

We've been looking at a lot of food but we haven't considered dishes. Let's change that. Again, simplicity is where it's at. Buckwheat crêpe, ham, gruyère, egg. Done. This one is a gift from Brittany.

I feel like members of the anglosphere associate french cooking with complicated or overly elaborate cooking, when that's not the case at all. Turns out, France had peasants too. Sure, the stuff that Bocuse and Ducasse put out is arguably a little stuffy, but that's not what you'll find in a French household on a tuesday night.

Pommes aligot are pretty amazing as well, you've got some good taste there m8. Easier to fuck up than a lot of people think though- if you let them cool too much they'll end up lumpy but if you add cheese while they're too hot you can actually break them, seeing as they're often 50%+ cheese by weight. Same deal with restaurant-style pommes puree- i feel like a lot of people are probably happier not realizing that they can be over half butter by weight.

Honestly though I think technique-wise one of the absolute coolest things you can do with a potato is also one that looks, on the surface, ridiculously simple- pommes souffle. Literally just double fried slices of potato. But if you do the slicing and frying JUST SO, they end up not just crispy but puffed up to a level that's almost hard to believe.

They (generally) use a technique called gavage, which is force feeding. It looks kinda inhumane on the surface but only because it would be unpleasant to us as humans. Geese and ducks aren't humans, they're animals that swallow whole fish and such and as such have no gag reflex, and also naturally gorge during certain times of the year. It doesn't bother them- hell I've been to a farm that raised duck for foie gras, and they lined up for it. Obviously having a liver that fatty means you're not exactly 'healthy' in the traditional sense, but A) they're going to get eaten later on anyways, and B) the birds can only put on fat like that if they're really well looked after and low-stress, so generally animals being raised for foie gras are treated REALLY well overall.

It's basically all down to people anthropomorphizing animals and has very little basis in reality imo.

If you're REALLY uncomfortable with the whole idea of gavage, there are places that raise ducks/geese for foie gras without it, generally by keeping the area where they nest/sleep dark almost all the time to mimic winter, and just providing them available food at all times; they just keep gorging on their own to prepare for a migration that never happens. Obviously even more expensive and niche than regular foie, but good if you have ethical issues with how it's traditionally produced.

Although you can definitely play around with that recipe, the main thing as far as I'm concerned is the flavor combination.
