this, you're cooking on too high of a heat

my personal favourite is over easy covered in clubhouse garlic and pepper spice (which is mostly sodium acetate) on butted bread

the synergy between the sodium acetate and the yolk is what makes it so good

I think the best way is to grease up a small skillet with either butter or your favorite oil (Olive or whatever) and then crack an egg into it when it's hot. Sprinkle a little pepper on early, wait until the whites firm up a bit before adding salt. (I think I read somewhere that salt breaks down something in the egg if added too soon. I dunno, don't quote me on that.) Fry until the whites around the yolk are firm, then scoop it up with a spatula and lay on a buttered piece of bread.

Eat around the yolk and then save the yolk for the last bite and enjoy the creaminess as it explodes in your mouth. Eggs are exquisite.

Worked at a high turnover greasy diner.

I used a low heat, and a stainless steel bowl with plenty of butter. Cooked perfect, never stuck and easy to serve.
You need a gas stove to do this tho.

For a regular pan, plenty of butter, start off medium heat, non stick baking spatula, and sit for pan to heat up a bit. Crack egg in the pan, if you're doing more than one, crack all in a bowl and dump them in pan, wait about ten seconds and turn down heat. Cook until whites are not snotty.

These anons are only half right. You're gonna want to heat the pan at the highest setting. Once it's nice and hot, lower the heat to medium-low then immediately put your eggs in the pan. Cover them and in about 3 minutes they're done.

Putting them onto a really hot surface makes them cook really fast and hold their shape, making them nice a thick, instead of spreading out on the pan and getting flat and easy to burn. Covering while they cook will give the yolk a pink color with the yolk nicely cooked but still runny. If runny yolk isn't your thing just leave covered for another 2 minutes on low heat.

That's a great way to have a disgusting layer of raw clear goo over the top of the yolk.

You dont cover fried eggs unless you want a lazy mandate overeay to develope a skin.

Otherwise the cover method is useless unless you're making eggs on the fly in a restaurant environment.

You have to fry eggs at three, but let it preheat the pan fully. It's kindof weird
